Ingredients

3 (12oz)cans tomato paste

6 (12oz) cans water (use empty tomato paste cans to measure

1 (28oz)can crushed tomatoes

1 large white onion, chopped

4 cloves garlic, minced

1 Bay Leaf

1/2c. Parsely Flakes

3 tbsp. Oregano

1 tbsp. Basil

1/2c. Parmesan Cheese

1tsp. Red Pepper Flakes

Salt & Pepper to taste

Olive Oil

MEATS:

Meatballs (use your favorite recipe), make them large or small

Chicken: Use legs and thighs

Pork: Use Italian sausage

Preparation

FOR MEAT: Meat balls, chicken, pork sausage.

In Olive Oil saute onions until tender. Add garlic and cook for 1 minute. Add tomatoe paste, water and stir until well blended. Add the crushed tomatoes, al the seasonings and the Parmesan Cheese. Bring to boiling and then reduce heat to simmer. Partially cover pot (or it will splash all over your stove). Simmer for 1 hour. Add meatballs and simmer for 1-1/2 hours. Remove meatballs, cover and refrigerate. Add chicken and simmer for about 1 hour. Remove chicken from sauce and place with meatballs. Add pork and simmer for 1 hour. Add chicken and meatballs back to sauce and heat reheat for another hour. Sauce is not complete. There should be plenty to freeze.
