Ingredients

4 cups whole wheat flour

1 cup white flour

1 tsp baking soda

1/2 to 3/4 cup coarse oatmeal flakes

1/2 tsp salt

2 to 3 cups buttermilk

Preparation

  • Pre-heat oven to 425
  • Combine all dry ingredients, blend very well
  • Make a well in the flour and add 2 cups buttermilk; mix until just holding together **note: due to elevation, it may be necessary to add more milk - start with 1/4 to 1/2 cup, adding only as much as needed so dough holds together and is NOT wet - only add up to 1 cup extra
  • DO NOT KNEAD!
  • Form dough into a ball on buttered cookie sheet
  • Using butter knife, slice a cross through the top, cutting almost all the way through
  • Sprinkle oatmeal flakes on top of bread **note: seeds can also be used i.e. sesame, sunflower, etc.
  • Bake for 40 - 45 minutes
  • Allow 1/2 hour for bread to cool before cutting
