Ingredients
2 cups flour
2 cup (two sticks) butter
½ cup powdered sugar
4 eggs
4 Tbsp fresh squeezed lemon juice (about two lemons)
2 cups granulated (regular) sugar
4 Tbsp flour
1 tsp baking powder
½ tsp salt
Grated zest of one lemon (optional)
Preparation
Crust: Melt butter in a 9x13" pan. Mix 2 cups flour and powdered sugar. Pour into pan and stir with melted butter. Press down firmly to form a crust. Bake 20 minutes at 350 degrees.
Custard: Beat eggs, lemon juice and zest together. Sift to combine 2 cups sugar, 4 Tbsp flour, baking powder and salt.
Add sifted mixture to egg and lemon juice mixture. Pour on top of the baked crust while it is still hot.
Bake 20 minutes more at 350 degrees.
Remove from oven and sift powdered sugar over bars while still hot. Cool one hour before cutting.
