Ingredients
Cooking spray
1 cup finely chopped red onion
5 tablespoons ketchup or ketchupeno, divided
1/2 cup panko (Japanese breadcrumbs)
1 teaspoon Worcestershire sauce
3/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 beaten egg
1 pound ground bison
Preparation
Preheat oven to 350°. Heat a skillet over medium heat. Coat pan with cooking spray. Add onion to pan; cook 12 minutes or until tender, stirring occasionally. Remove from heat; cool slightly. Combine onion, 3 tablespoons ketchupeno, and remaining ingredients in a bowl, and gently stir just until combined. Add bison last so you won’t over mix and toughen the mixture. Place meat mixture on a baking sheet with high edges coated with cooking spray; shape into an 8 x 4-inch loaf. Brush top of loaf with remaining 2 tablespoons ketchupeno. Bake at 350° for 45 minutes. Let stand 10 minutes; cut into 8 slices.
