Ingredients
4 Cornish Hens, cut in half
6 tbsp butter
8 tbsp orange marmalade
8 tbsp ginger marmalade
1/2 cup calvados or Grand Marnier
4 tbsp lemon juice
1 cup wild rice, cooked
some pecan, chopped
Preparation
- Preheat oven to 350.
- Salt cavity and stuff hens with rice, pecans, and a little marmalade mixture
- Place hens in baking pan
- Melt butter over medium heat
- Add marmalades, lemon juice, and calvados. Stir until hot.
- Coat hens well with marmalade mixture.
- Cover hens with foil
- Bake for 30 minutes. Baste frequently.
- Cook another hour, or until done, now basting once every 15 minutes.
