Ingredients

4 Cornish Hens, cut in half

6 tbsp butter

8 tbsp orange marmalade

8 tbsp ginger marmalade

1/2 cup calvados or Grand Marnier

4 tbsp lemon juice

1 cup wild rice, cooked

some pecan, chopped

Preparation

  1. Preheat oven to 350.
  2. Salt cavity and stuff hens with rice, pecans, and a little marmalade mixture
  3. Place hens in baking pan
  4. Melt butter over medium heat
  5. Add marmalades, lemon juice, and calvados. Stir until hot.
  6. Coat hens well with marmalade mixture.
  7. Cover hens with foil
  8. Bake for 30 minutes. Baste frequently.
  9. Cook another hour, or until done, now basting once every 15 minutes.
