Ingredients

1 C. Flour

2 Tbsp. Sugar

2 Tsp. Baking powder (no aluminum)

1 Tsp. Baking soda

1/2 Tsp. Salt

A little cinnamon

Mix all together in a bowl. In another bowl mix well:

1 Egg

4 Tsp. safflower or canola oil

1/2 C. Vanilla or plain yogurt (use less if using Greek yogurt or they’ll end up pretty thick)

3/4 C. Milk

Preparation

Add the wet ingredients to the dry. Mix slowly.

Use more or less milk depending on how thin you want the pancakes.

Use plain yogurt if you want less calories (sugar) or substitute some of the flour with chopped up oats or crumbled wheatabix for more fiber.
