Ingredients
2 chicken breasts
2 T vegetable oil
3 cans great northern beans
2 cans chicken broth
1/2 Med onion diced
1/2 t. cumin
1 t. oregano
1 t. chili powder
1 t. salt
1/2 t. black pepper
8 oz. pepper jack cheese
Preparation
dice chicken breasts and sautee in vegetable oil over medium heat. remove chicken and sautee onion until clear. add chicken and remaining ingredients and bring to a boil. Then simmer covered for 45 minutes. Cube pepper jack. turn off heat and add pepper jack and replace lid. when cheese is completely melted, it’s ready!
