Ingredients

1/2 onion

1 lb. broccoli, steamed and mashed

1/6 cube margarine or butter

3/4 cup flour

2 cups flour

2 cups chicken broth

1 qt. 2% milk

1 1/2 teaspoon salt

1/2 teaspoon sugar

Cheddar cheese, grated

Preparation

Sauté onion butter until clear. Stir in flour slowly into mix (may add broth if needed); whisk until dissolved. Add broth, stirring to blend. Add milk, stirring constantly until thickened (don’t scorch). Add salt and sugar. Add steamed mashed broccoli. Add cheese to taste. Simmer, stirring constantly, until just right.
