Ingredients

1 medium onion, quartered and peeled.

2 medium green bell peppers, cut into 1 inch squares

2 medium cucumbers seed, peeled and halved length wise

8 tomatoes, stem removed and skinned.

2 garlic cloves

2 tbsp olive oil

3 cups tomato juice

1/8 tsp tabasco sauce

2 Tbsp red wine vinegar

2 tsp salt

1/4 tsp pepper

parsley - just a little

Preparation

Use a Cuisinart Pulse onion 5-6 times and transfer to a bowl

Pulse pepper 3 times - transfer

Pulse cucumbers saving one section to cut into small slices - transfer

Remove skin from tomatoes in hot water bath. Then transfer to Cuisinart. Add garlic to tomatoes and puree. Add remaining ingredients to mix bowl and mix well.

Cover and refrigerate for 2-3 hours.

Add avocado, green onions, cheese, croutons for garnish.
