Ingredients
1/2 onion
2 cloves garlic
1/2 cup carrots
1/2 cup celery
handful chopped parsley
2 green onions
2 Tblsp Tomato Paste
2 boca burgers cooked in microwave (200 calories total)
1/2 cup beans of choice
1 tsp dijon mustard
4 tsp parmesan cheese
1/4 cup nonfat plain yogurt
salt and pepper
1/2 lemon
1 tsp cinnamon
tobasco
Bed of baby Spinach
Preparation
Chop onion, garlic, carrots, celery, parsley, green onions, and place in bowl. Cook 2 boca burgers in microwave, chop, and place in bowl. add 1/2 cup of beans into bowl. squeeze lemon in, add tomato paste, add parmesan cheese, cinnamon, tobasco, salt, pepper. mix, adjust seasoning to taste.
I like to serve my salad atop a nice bed of baby spinach, with a huge dollop of nonfat plain yogurt, and a sprinkle of green onions.
