Ingredients

1 1/4 cup water or chicken broth

1 cup pearl couscous

1 tsp basil oil

1/2 tsp salt

1/4 tsp cinnamon

2 tbsp chopped mint (optional)

1/4 red bell pepper, chopped

6 oz cherry tomatoes, quartered

1/4 cup sliced green olives

1/3 cup basil, chopped

1 tsp garlic powder

2 TBSP capers

Preparation

Boil water in a medium sized saucepan. Add couscous and simmer until tender, about 5 minutes. Add all remaining ingredients and stir until warmed completely.
