Ingredients
1 1/2 lb. Yukon Gold potatoes, 1/2" dice
1 tbsp. oil
1 1/2 tsp. coriander
1 1/2 tsp. cumin
1/4 tsp. turmeric
1/4 tsp. cinnamon
1/4 tsp. paprika
1 tsp. salt
1 tbsp. oil
1 small red onion, diced
2 cloves garlic, minced
1/4 c. golden raisins
juice from 2 lemons
1/3 c. chopped fresh dill
garnish: lemon zest and fresh mint
Preparation
Cook diced potatoes until tender. Heat 1 tbsp. oil in frying pan, add spices and salt, add potatoes. Saute until brown, about 15 minutes.
Add 1 tbsp. oil, onion, garlic and raisins. Continue to saute for 8 minutes.
Remove from heat, stir in lemon juice and dill.
Serve garnished with lemon zest and fresh mint.
