Ingredients

1/4 c olive oil

1 med (sweet) onion, chopped (I used celery instead)

garlic, squished (I threw in several cloves, use your imagination)

1 bell pepper, chopped

1 sliced carrot

1 lg sweet potato, peeled and cut in 1/2" cubes

2 lg tomatos, diced (or 1 16oz can diced tomato w/juice

1 16oz can chick peas, drained/rinsed

1/4 c raisins

1/2c veg broth

2T lemon juice

1T Coriander

1/2t Cayanne Pepper

1 and 1/2t Cumin

Preparation

-Sautee garlic and onion in olive oil until soft -Add rest of ingredients, mix well, cover and stir occasionally until everything is soft

Makes 4-6 servings (more like 4)
