Ingredients

3 lamb shanks

1 onion, chopped

2 carrots, chopped

2 large cloves garlic, chopped

1 tsp fresh ginger, minced

1 tsp cumin

1/2 tsp ground coriander

1/2 tsp cinnamon

1/4 tsp allspice

1/4 tsp nutmeg

1 Tbsp tomato paste

1 tsp hot chili paste

1 cup dry red wine

4 tsp chicken stock granules

1 cup water

10 apricots, chopped

6 dates, chopped

1/4 cup molasses

1 Tbsp whole pepper corns

1 tsp dry mustard.

Fresh coriander.

Preparation

Brown lamb in olive oil x 10 min.

Remove to a plate.

Add to fat in the pan - onion, carrots and garlic and cook 5 min on med heat till onion translucent,

Add ingredients from ginger to the wine and boil till thick (about 5 min).

Add remaining ingredients except fresh coriander.

Bring to a boil.

Transfer to slow cooker.

Cook on high 4 to 5 hours.

Serve atop couscous and sprinkle chopped coriander over.
