Ingredients
1&1/4 cups salad oil (Mother specified Crisco oil)
2 cups sugar
2 large eggs
1 teaspoon salt
1 teaspoon soda
2 teaspoons baking powder
1 teaspoon vanilla
2&1/2 cups flour
1 cup chopped pecans
3 cups raw apples - cut into “pea-sized” pieces
Preparation
- Cut up apples and set aside
- Measure salad oil into mixing bowl.
- Add sugar, eggs, vanilla and mix well at low speed until creamy smooth.
- Sift flour and measure.
- Sift again with salt, soda, and baking powder.
- Add flour mixture to creamed mixture in small amounts.
- Beat well after each addition.
- When batter becomes stiff, remove beaters & finish mixing by hand.
- Fold in chopped nuts and apples last. Mix well.
- For layers - 350 degrees for 40 to 45 minutes. Tube pan - start at 300 degrees for 30 minutes then 250 for 2 hours or until done.
