Ingredients
Dry Ingredients:
1-1/2 cup good quality whole wheat pastry flour
1 cup steel cut oats
1 tablespoon baking powder
1/4 teaspoon salt
Wet Ingredients:
2 eggs
1-1/2 cup buttermilk
1/3 cup vegetable oil
milk for thinning
Other:
Spray-on oil
Preparation
Set up and turn on waffle iron. Set it at a high temperature and let it heat while you make the waffle batter. (Note: you may have to experiment to find the right temperature for your waffle iron.)
Blend dry ingredients in a large bowl.
Whisk wet ingredients in another bowl.
Pour wet ingredients into dry ingredients and stir to just mix.
Thin with milk until it pours right for your waffle iron. Again, you may have to experiment.
Spray the hot waffle iron with oil.
Pour enough batter on the iron that it will spread out to the edges but not overflow when you close the iron. You may have to experiment!
Bake the waffle till it stops steaming.
Plate these waffles immediately from the iron and serve with real butter and real maple syrup.
The ingredients in these waffles make them truly redolent of wheat, oats, and buttermilk hot off the iron, but they will lose crunch and tenderness very quickly as they cool. Serve’em up!
