Ingredients
8 oz. fresh mozzarella
2 T. extra virgin olive oil
coarsely ground pepper
3 T. fresh basil, sliced into fine strips
3 green olives, chopped (opt)
1 T. red bell pepper, chopped
1 T. capers
1 t. lemon zest, sliced into fine strips
fresh lemon juice to taste
Preparation
Slice the cheese into slim strips. Drain briefly. In a large bowl, combine cheese with all other ingredients. Add fresh lemon juice to taste. Refrigerate before serving.
