Ingredients
2-3 pounds baby red potatoes boil until just slightly tender
1 boiled egg
DICE:
1/2 onion
1/2 seedless cucumber
1/2 red or yellow pepper
1/4 cup diced white sharp cheddar chees
(1/4 crumbled cooked bacon - if desired)
set aside
IN LARGE MIXING BOWL :
1/2 - 1 CUP Hellman’s real mayo
1 tablespoon Lee & perrins Worcestershire sauce
1 tablespoon yellow table mustard
1 tablespoon sweet relish
1 hard boiled egg (diced)
1 teaspoon salt
1 tablespoon fresh ground pepper
blend and mix until smooth
Cut cooked/chilled potatoes to desired size and blend above ingredients until well mix
Wash & dry well 2 cups tender baby spinach - serve cold Mr. Marks Potatoes salad on bed of fresh baby spinach ….yum
