Ingredients

1 qt. whole milk

¼ teaspoon salt

½ cup rice

½ cup sugar

½ cup raisins

2 eggs

1 teaspoon vanilla

1 cup evaporated milk undiluted

Preparation

In a large heavy pot bring milk and salt to a simmer. Add rice slowly and simmer 15 minutes. Add raisins; simmer 5 minutes longer. In a small bowl beat eggs, sugar, evaporated milk and vanilla. Add a few tablespoons of rice mixture to egg mixture then return all to rice pot, cook slowly and stir until pudding thickens. Stir often while pudding cools.
