Ingredients

3 cups grated parmesan cheese

1 cup to 1 and ½ cups minced shallots

2/3 cup mayonnaise (or enough to bind ingredients)

Italian seasoning, oregano or tarragon (your choice, optional)

Pumpernickel or dark rye (Pepperidge Farm’s party rye is great but hard to find) cut into 1 ½ inch squares

Preparation

Mix parmesan and shallots. Add just enough mayonnaise to bind. Spread generous amounts on bread pieces. Broil until golden brown on top (about 3-5 mins.).
