Ingredients
1/2 c crisco shortening
1/3 c sugar
1 egg
1 c pale molasses
1 T lemon juice
1/3 c boiling water
2 t baking soda
3 1/2 c flour
1 t cinnamon
3/4 t pumpkin pie spice
1/2 t ginger
1/4 t salt
optional - raisins
Preparation
Combine crisco, sugar, egg, molasses and lemon juice in a large bowl. Beat 1-2 minutes on high. In a separate bowl, combine boiling water and baking soda. Add to beaten mixture, and add flour, cinnamon, pumpkin pie spice, ginger, and salt. Beat until smooth. If adding raisins, stir in last by hand.
Drop by rounded teaspoonsful onto lightly greased or parchments-paper covered cookie sheet.
Bake in 350F oven for 8-10 minutes. Watch carefully - 8 minutes is usually enough for a chewy cookie, but if you like a crisper cookie keep for 10. Cool for 2 minutes before removing from sheet.
