Ingredients
1lb all purpose flour
1/4 cup breadcrumbs
1/2lb raisins
1/2lb sultanas
1/2lb currants
1/2tsp salt
2 teaspoon cinnamon
1/2 tsp ground cloves
1/2 tsp ground allspice
1/2 tsp grated nutmeg
2 tsp ground ginger
1 tsp baking powder
2 cooking apples, grated
2 carrots, grated
2 eggs
1/2lb chopped beef suet or lard
1/2 lb brown sugar
1/4 cup chopped mixed peel
1/2 lb dark molasses
juice of 1 lemon
milk to mix
Preparation
Mix all the ingredients in a large bowl and add some milk to soften the mixture. Transfer the mixture to a cotton sheet, pillow case or boiling bag (clout). Tie top securely and place in a large stock pot that has a plate on the bottom. The plate will prevent burning of the dumpling. Bring to a boil then reduce to a simmer and cook gently for 3 hours. Carefully remove and turn out onto a plate. Sprinkle with sugar or let cool and slice. Sliced dumpling can be stored frozen between freezer wrap. When serving for breakfast thaw the dumpling slices and saute briefly.
