Ingredients

1/2 cup Heinz ketchup

3 tablespoons plus 1 teaspoon dark brown sugar

3 tablespoons salted brown beans (also called brown bean sauce or ground bean sauce; made of fermented soybeans)*

1 teaspoon hoisin sauce*

4 teaspoons dry sherry

3 to 4 garlic cloves, minced

Preparation

Combine all the ingredients in a small bowl. Makes about 1 cup.

Use sauce to glaze or marinate meat before cooking. If using as a condiment, cook sauce uncovered over low heat in a small, heavy saucepan at least 20 minutes. Stir frequently.

*I recommend Koon Chun brand hoisin sauce and Yeo’s salted brown beans or Koon Chun bean sauce for this recipe.
