Ingredients

3/4 cup whole wheat flour

1/2 tsp baking soda

1/2 tsp salt

2/3 cup unsweetened applesauce

3/4 cup brown sugar

1/2 tsp vanilla

1 egg

1 1/2 cup Muesli

1/4 cup yogurt chips

1/4 cup unsweetened, shredded coconut

Preparation

  1. Pre-heat oven to 350 F
  2. Whisk flour,baking soda and salt together
  3. In separate bowl, blend applesauce,sugar and vanilla together. Beat in egg.
  4. Stir in flour mixture. Fold in muesli and other mix-ins.
  5. Drop by rounded teaspoonfuls onto cookie sheets lined with parchment paper. (If batter very wet/gooey, put batter in freezer for 10-15 minutes to let firm up before dropping on cookie sheet.) Bake 10-12 minutes. Cool on racks.
