Put all of the garlic, half of the olives, pickled vegetables and the seasonings in the food processor with 1/2 cup olive oil and pulse to a fine chop.

Roughly chop everything else and stir together with a cup of REALLY good peppery olive oil.

Let those flavors hang out and marry for a while, overnight or a week.

Preparation

Now it’s Party time!

Make those patties about 1/2 inch thick (6). Grill for about 5 minutes on each side.

Put a few spoons of olive salad on the bottom of the roll, ham on that, burger on that, cheese on burger and top with a mound of olive salad.

It’s messy and drippy and OOOH so good. Step away from the car and enjoy.
