Ingredients
1 cup Kalamata Black Olives (pitted) - chopped
1 cup Greek Green (pitted) - chopped
2-3 cloves Garlic - chopped
1/4 cup Roasted Red Peppers - chopped
1 Tbl. Red Onion - chopped
1 Tbl. Parsley - chopped
1/4 cup Olive Oil
Dash Red Wine Vinegar
Sandwich Ingredients:
1/4 lbs Provolone
1/4 lb. mozzarella
1/4 lb. Genoa Salami
6 ozs. Capicolla
1/4 lb Pepperoni (could use 1/8lb of pepperoni and 1/8 lb of Mortadella)
Preparation
Chop up all of the vegetables and mix with the olive oil and vinegar. Let marinade for 1 our or more.
For the sandwich, stack the meats and cheeses and top with the olive salad.
