Ingredients
1 red, 1 yellow, 1 green pepper, chopped large.
6 Chicken breasts, pounded thin.
2 C. Tequila.
1/2 C. Lime Juice.
2 tsp Chili Powder.
1 large onion, chopped large.
2 tsp Cumin.
3 tsp dried cilantro (or 3oz fresh).
1 can chipotle peppers in adobo sauce.
Preparation
marinate chicken in ingred. tequila on down for 3 hours. Remove chicken from marinade, put in glass baking pan. Add peppers, pour some marinade into pan so that chicken is partially submerged. Bake in preheated oven @350 covered for 30 mins. Flip breasts, cook uncovered for 20 more. Serve with rice, or chips and my uber-guac.
