Ingredients
4 cups Dr. Fuhrman’s VegiZest broth
2 16-ounce cans navy beans
1 16-ounce can diced tomatoes, no salt added
1 green apple, peeled and chopped
1/4 cup onion, finely chopped
1/4 cup carrot, chopped
1/4 cup celery, chopped
1/4 cup green pepper, chopped
1 tablespoon fresh parsley, chopped
2 teaspoons lemon juice
1 teaspoon curry powder
1/8 teaspoon cloves
tabasco sauce, to taste
ground pepper, to taste
Preparation
In a large saucepan combine broth, beans, undrained tomatoes, apple, onion, carrot, celery, green pepper, parsley, lemon juice, curry powder, cloves, tabasco and pepper. Bring to a boil, then reduce heat. Cover. Simmer for 20 minutes, stirring occasionally.
