Ingredients
2 & 1/2 cups cooked brown rice
2/3 cup of cooked rice
1/2 or small red capsicum (pepper)- chopped
Chopped spring onions
1/2 or small tin of corn
2/3 cup of currants
150 - 200g cashew nuts
6 slices chopped ham or bacon
Dressing:
1/4 Cup Sunflower oil
2 Tablespoons fresh lemon juice
4 Tablespoons of light soya sauce
Mix all ingredients together
Preparation
Place all ingredients into a salad bowl with rice. Stir in dressing and SERVE!! DELICIOUS!!
