Ingredients

1kg waxy potatoes

1 red pepper

1 onion (red or white)

1 can kidney beans, drained

1 small can of corn, NOT drained

500g low fat mayonaise

some chopped parsley

Preparation

Boil potatoes in their skins until “al dente”, leave to cool, peel and cut in slices. Mix with peppers, beans and corn. Add mayonaise. Sprinkle with some parsley and leave to stand for 1 hour
