Ingredients

Filling

3 pounds (about 8) McIntosh apples

3/4 cup plus 1 tablespoon sugar

2 tablespoons all-purpose flour

1 teaspoon cinnamon

1/4 teaspoon freshly grated nutmeg

1/4 teaspoon salt

1 tablespoon fresh lemon juice

2 tablespoons cold unsalted butter, cut into bits

milk for brushing the crust

Crunch

Dry ingredients–mix the following

1.5 cups rolled oats

1/2 cup w.w. pastry flour (lately I substitute brown rice flour)

1/2 cup almonds (slivered or chopped)

1/2 cup walnuts (chopped)

(you can substitute other nuts, if you prefer)

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

Preparation

Wet ingredients–whisk together until smooth 1/3 cup oil (canola or grape seed) 1/3 cup pure maple syrup 1 teaspoon vanilla extract (optional)

Thoroughly coat dry ingredients with wet; place on greased cookie sheet and bake @ 350 degrees for about 45 minutes, stirring every 10 minutes…remove from oven when golden colored…cool.
