Ingredients
1 lb self-raising flour
1/2 level teaspoon salt
1 level teaspoon mixed spice
8 oz granulated sugar
8 oz block margarine (or butter, or mixture of the two)
4 oz currants
4 oz sultanas
(few chopped glace cherries?)
3 medium eggs
just over 1/4 pint milk
Preparation
Heat oven to 375
Grease and line an 8" - 9" cake tin
Sieve flour, salt, and mixed spice into a mixing bowl.
Cut margarine into small pieces and rub into flour mixture till it resembles breadcrumbs, then stir in sugar and fruit.
Beat eggs and milk together and add to dry ingredients; mix until well blended together. (You may need to add a little extra milk if the mixture is too dry.)
Place mixture in tin and bake for 1 1/2 hours, or until firm to the touch and golden brown.
