Ingredients
12oz sliced mushrooms
12oz jar maranated Artichokes drained and rinsed
1/2 sweet onion chopped
1/2 bunch scallions chopped
12oz arborio rice
1/2 cup grated parmesan cheese
32oz container chicken stock plus 2 cups water
1/2 stick salted butter
1/2 teaspoon salt and 1 teaspoon pepper
Preparation
- Bring chicken stock to a boil in separate pot then reduce to simmer.
- Saute mushrooms, onion, salt and pepper in butter on medium heat for 7-10 minutes.
- Add rice and saute for 3 more minutes then raise heat to medium-high.
- Begin adding the hot stock one/two cup at a time making sure the rice is always just covered.
- When rice is almost done add the artichokes and scallions.
- Add the cheese at the end. Toss and serve. enjoy.
