Ingredients

12oz sliced mushrooms

12oz jar maranated Artichokes drained and rinsed

1/2 sweet onion chopped

1/2 bunch scallions chopped

12oz arborio rice

1/2 cup grated parmesan cheese

32oz container chicken stock plus 2 cups water

1/2 stick salted butter

1/2 teaspoon salt and 1 teaspoon pepper

Preparation

  1. Bring chicken stock to a boil in separate pot then reduce to simmer.
  2. Saute mushrooms, onion, salt and pepper in butter on medium heat for 7-10 minutes.
  3. Add rice and saute for 3 more minutes then raise heat to medium-high.
  4. Begin adding the hot stock one/two cup at a time making sure the rice is always just covered.
  5. When rice is almost done add the artichokes and scallions.
  6. Add the cheese at the end. Toss and serve. enjoy.
