Ingredients
1 lb ground chicken or turkey
1 c. chopped onion
1 clove garlic, minced
1 tbsp oil
8 oz mushrooms, sliced
1 c. chicken stock
3/4 c. fresh breadcrumbs
1 bay leaf
1/2 tsp EACH thyme, marjoram, and salt
1/4 tsp EACH ground cloves and black pepper
1 tbsp chopped fresh parsley
2 9" unbaked pie shells
Preparation
Preheat oven to 425 deg F.
Heat oil in a large skillet, and brown the ground meat with the garlic and onion until the onions are limp. Stir in mushrooms. Cook, stirring, for 2-3 minutes. Add stock, breadcrumbs, and spices. Cook, stirring occasionally, for about ten minutes. Discard bay leaf. Stir in parsley.
Spoon mixture into pie shell. Cut decorative vents into second pie shell. Place over filling and crimp edges. Bake in 425 deg F oven for 15 minutes. Reduce heat to 350 deg F, and bake for another 10-15 minutes, or until pastry is golden brown.
