Ingredients
2 slices of bread
large whole portabello mushroom, sliced to fit bread slices
1 small onion, sliced
1 garlic clove, minced
1 - 2 tbsp. olive oil
5 tbsp. mayonnaise
1/3 cup olives, drained
tomato slices cut to fit size of bread
broccoli or other sprouts
shredded cheese, I use KerryGold Dubliner
Mrs. Dash extra spicy to taste
1 tsp. lemon juice
salt and pepper to taste
Preparation
Saute onion and garlic in 1 Tbsp. olive oil stirring until soft and translucent. Put mayonnaise in blender. Add olives, sauteed onions, garlic, and lemon juice. Blend. Add Mrs. Dash to taste & refrigerate.
In second tblsp. olive oil, saute portobello mushrooms until soft.
Assemble sandwich in square of tin foil. Put mayonnaise mixture on each slice of bread. Add the mushrooms, tomato slices and sprouts. Sprinkle with shredded cheese. Fold up sandwich in tin foil and bake in hot oven for 15 minutes until cheese is melted. Use tin foil to hold sandwich together while eating.
