Ingredients

4 T butter

1 C finely chopped fresh mushrooms

1/4 C shallots, finely chopped

1/4 C white wine

1/4 C vegetable stock

2 scallions, white and green parts, minced

8 oz cream cheese

salt & pepper to taste

Preparation

In a large skillet, melt butter and sauté the mushrooms and shallots for 3 to 5 minutes or until tender. Add the wine and stock and simmer until the liquid has been absorbed. Remove from the heat and transfer to a bowl. Add the cream cheese, salt, pepper, and minced scallion. Mix thoroughly. Serve warm or chilled.
