Ingredients
1/4 cup of butter
1/3 cup of chopped onions
1/3 cup of chopped celery
1 red pepper
2 eggs
3 oz cream cheese (softened)
3/4 cup fine bread crumbs
1 tsp salt
1/2 tsp dried basil
1/4 tsp dried rosemary
1/8 tsp black pepper
1 cup of chopped walnuts
1 pound of mushrooms
Preparation
Preheat oven to 400 degrees. Melt butter in a large pan. Add onions, celery, and red pepper. Saute for 5 minutes (until tender). In a food processor, beat eggs and cream cheese until smooth. Add bread crumbs, spices, onion-celery-pepper mixture, walnuts, and mushrooms. Process until smooth. Pour mixture into a square pyrex dish. Cook until mixture is firm at the edges and not liquidy in the center (check after an hour). Serve at room temperature or slightly chilled.
