Ingredients

3/4 pound mushroom, cubed

4 tablespoons butter

1/2 cup onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon tumeric

1 cup rice

1 piece bay leaf

1 1/4 cups chicken broth

Preparation

Preheat oven to 400 degrees.

Wash, trim, and cube mushrooms—should be about 2 cups.

Heat 1/2 butter in ovenproof pan with tight fitting lid.

Add onion and garlic.

Saute several minutes then add mushrooms. Cook about 5 minutes, stirring often.

Sprinkle with tumeric and add rice and bay leaf.

Stir until rice is coated with butter.

Add broth, salt, and pepper.

Cover and bring to boil on top of stove.

Place in 400 degree oven and bake for 20 minutes.

Remove and stir in remaining butter.
