Ingredients
½ cup celery, finely chopped
½ cup onion, finely chopped
½ cup green pepper, finely chopped
½ stick margarine
1 cup dry rice (but NOT instant)
¼ teaspoon black pepper
½ teaspoon red (or cayenne) pepper
½ teaspoon white pepper
½ cup mushrooms with one-half of the juice
2 cans beef consommé
Preparation
Sauté celery, onion and green pepper in the margarine. Put this with the dry rice, black, red & white peppers (I sometimes add more than the recipe calls for; others may want to use less as it can get pretty spicy!) and the mushrooms with half the juice into a large casserole dish (any shape works fine). Add the 2 cans beef consommé -stir to mix well. Cover and bake in 300o oven two hours. Stir a couple of times after it starts baking.
