Ingredients

3 slices of sourdough bread- crust removed

4 tbsp butter

3 8oz pkgs cremini mushrooms

4 lg garlic cloves sliced

salt and pepper

4 cups veg broth

2 cans chicken broth

3/4 cup 35% cream

herb garnish

Preparation

  1. Preheat oven to 350. Bake bread 1 hour.
  2. Melt butter in heavy pot. Add mushrooms and garlic, season with salt and pepper. Cook 10 mins until mushrooms are softened. Add broth and cream, cover and simmer 10 mins.
  3. Add toasted bread to soup, simmer 5 mins. Puree soup and season with salt and pepper.
  4. Garnish with fresh herbs and serve
