Ingredients
3 slices of sourdough bread- crust removed
4 tbsp butter
3 8oz pkgs cremini mushrooms
4 lg garlic cloves sliced
salt and pepper
4 cups veg broth
2 cans chicken broth
3/4 cup 35% cream
herb garnish
Preparation
- Preheat oven to 350. Bake bread 1 hour.
- Melt butter in heavy pot. Add mushrooms and garlic, season with salt and pepper. Cook 10 mins until mushrooms are softened. Add broth and cream, cover and simmer 10 mins.
- Add toasted bread to soup, simmer 5 mins. Puree soup and season with salt and pepper.
- Garnish with fresh herbs and serve
