Ingredients

2 tbsp. butter

2 cups mushrooms-sliced

1/4 cup green onions

2 tbsp. flour

2 cups milk

2/3 grated parmesan cheese

salt and pepper to taste

375 grams tortellini

1-1/2 cups mozzarella cheese-grated

640ml Tomato Sauce

Preparation

  1. To make parmesan/mushroom sauce, melt butter in a large saucepan. Cook mushrooms and green onions until tender and liquid has evaporated.
  2. Blend in flour and gradually stir in milk. Cook and stir over medium heat until mixture comes to a boil and thickens.
  3. Remove from heat and stir in parmesan cheese. Add salt and pepper to taste. Cover and keep warm.
  4. Cook tortellini according to directions.
  5. Drain and stir into mushroom sauce.
  6. Pour tomato sauce into baking dish.
  7. Spoon tortellini mixture over tomato sauce.
  8. Sprinkle with mozzarella.
  9. Broil until cheese is melted and golden. Enjoy!!
