Ingredients

2 Tbsp. butter

1/3 cup chopped green onions

1/3 cup chopped fresh cilantro

1 Tbsp. grated fresh ginger

4 cloves garlic, minced

12 oz. (about 3 1/2 cups) fresh button mushrooms

2 Tbsp. soy sauce

1/4 cup unsweetened coconut milk

1 Tbsp. lim ejuic

Steamed green beans OR hot cooked rice (optional)

Preparation

  1. In a large skillet, heat butter over medium-high heat. Add green onions, cilantro, ginger, and garlic. Cook and stir for 1 minute.
  2. Stir in mushrooms and soy sauce; cook for 2 minutes. Stir in coconut milk. Bring to a boil; reduce heat. Simmer, uncovered, about 5 minutes or until sauce thickens. Remove from heat. Stir in lime juice. Serve as a side dish or over steamed green beans or hot cooked rice.
