Ingredients
mussels, about 4 dozen
3/4 bottle white wine (I like vinho verde, Santola, Portugal)
1-11/2 heads garlic, chopped
4-5 shallots, chopped
2 bottles clam juice
6-8 T. butter
fresh thyme and parsley
olive oil
salt and pepper
Preparation
Cook shallots in olive oil and butter until soft. Add garlic for about 1 min. Add fresh thyme, white wine and clam juice, salt and pepper. Cook down about 15 min. Add mussels, cover pan and cook until mussels open. Top with fresh chopped parsley and a good finishing oil if desired. Serve with pasta or french bread.
