Ingredients
2lbs mussells
5 minced garlic cloves
2t olive oil
1 28oz can whole plum tomatoes (not drained)
salt and pepper 1/4 t
1 6oz package chopped spinach
Basil for garnish
Preparation
saute garlic in oil for one minute, add the tomatoes, chopped basil, salt and pepper and pinch of red pepper flakes. Simmer for 5 minutes. Add mussels and cook covered until mussels open. Pour into large serving bowl and serve over pasta (optional) and crusty bread for dipping (not optional)
