Ingredients

3 dozen large mussels, cleaned and steamed

4 Tbs sweet butter

½ cup green onions, thinly sliced

½ tsp sea salt

½ tsp freshly ground black pepper

½ tsp oregano

1 clove garlic, minced

4 cups Italian style bread crumbs

¼ cup dry white wine

¼ cup freshly minced parsley

3 Tbs black olives, chopped

4 Tbs grated Parmesan cheese

½ cup melted butter

Preparation

Preheat oven to 350 degrees. Remove mussel meat from shells, save shells. Chop mussels and set aside.

In a large skillet over medium heat melt butter. Add green onions, salt, black pepper, oregano and minced garlic. Cook until garlic is lightly browned. Transfer mixture into a bowl and add chopped mussels, bread crumbs, white wine, parsley, black olives and parmesan cheese; mix thoroughly. Pack mussel mixture into 18 large half shells and arrange in a large shallow baking pan. Drizzle butter on top. Bake 10 minutes.
